This coffee is roasted to our espresso profile. It is best prepared using espresso or traditional filter brewing methods.
Sandro Chavez comes from a family where coffee farming is ingrained in their blood. His Parents Audelo and Luisa taught their son from a young age everything he knows about coffee harvesting and processing. He is one of six sons all of whom work on the coffee farm.
Sandro over the last two years has been fundamental member of our team, and has seen the motivation to focus on the production of ‘Specialty Coffee’, ensuring tight controls on every stage from the planting of the coffee trees, to harvesting and processing the coffee cherries.
Thanks to his hard work and dedication, in 2019 Sandro built his own drying tunnel, which enabled him to sun dry all of his own coffee, which has resulted in him being able to sell his first micro-lot coffee production which we proudly bought. His ambition going forward is to continue to learn and implement different processes to improve his cupping profile and scoring. His coffee El Prado has exquisite notes of berries, caramel and honey.
