Farm Information

Jose Reyes Pabon, is our oldest farmer at 90 years of age he still oversees the harvesting of his coffee farm. Jose has dedicated his life to farming, and is a renowned farmer in the area. On his farm he has two varieties of coffee; Castillo and Colombia. This year we bought his full nano-lot crop of natural processed coffee.

To produce this coffee Jose dried the whole coffee cherry for 4 weeks on his raised drying beds. During this process the coffee bean is in contact with the fruity cherry for much longer, this extended contact between the fruit and coffee bean results in a much fruitier coffee.

Producing Natural Coffees is a longer process and requires a lot more control by the farmer, the risk of not drying the correctly can lead to ‘Over Fermentation’. This year Jose produced 70kilos of Natural coffee, this trial was a great success for him and is clearly reflected in the quality of the coffee he has produced. He is keen to repeat the process again next year and aims to increase the volume of Natural coffee he can produce.
