Alongside their Yellow Honey, Sidra Bourbon, and Gesha lots, this Natural process offers a different expression of their approach to fermentation and flavour development.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eFollowing the same attention to detail seen across all their coffees, this lot begins with the careful selection of fully ripe cherries. Instead of being depulped early in the process, the cherries are fermented and dried whole, allowing the sugars and fruit compounds to remain in contact with the seed for a longer period.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe result is a cup where the coffee tastes more like fruit than anything else, compared to their honey processed lot.
