The producer of this coffee Don. Carlos is a key member of the coffee community in Northern Nariño, having gained recognition for his dedication to improving coffee quality in his region. The Colombian Coffee Federation has awarded Don. Carlos for his meticulous processing of natural coffees, and dedication to his craft.
Don. Carlos meticulously checks for damaged or unripe cherries using flotation tanks. The unwanted cherries float to the top and are skimmed off, an important step to ensure the high quality and exceptional flavours he is renowned for. The cherries are then stored in bags for 96 hours to ferment which helps further develop the complexity of the flavours found in this coffee. Finally they are dried on raised beds for up to 120 hours.
The natural process creates a complex cup as the mucilage dries around the coffee seed naturally occurring microbes digest and break down natural sugars and acids, creating unique flavours.
