A special offering from the Botina-Portilla family, Señora Serida has been coffee farming all of her life. She now oversees operations along with her husband at their own farm and is heavily involved in every step of the process. During the harvesting season, the workday begins at 4am with washing the coffee that has been fermenting, before laying it out to dry.
Using a specially formulated hybrid of Timor & Caturra called “Catimor” this varietal was specially formulated in 1959 to be resistant to coffee leaf rust, meaning more sustainable farming and more security in the crop.
This year’s lot has been through controlled long fermentation of 40 hours, creating pronounced notes of juicy grapefruit and mango and the sweetness of honey whilst maintaining delicate floral notes.
