Ilder Muñoz has spent the past number of years experimenting with his processing methods in his commitment to producing interesting, delicious coffees.
He has split up his 4.5 hectare farm into a number of different micro-lots allowing him to grow and process a number of different lots side by side.
This particular lot of 2000 kilos has been honey processed, creating clean fruit flavours with rich sweet notes. Honey process sits between washed and natural coffees. It involves the partial removal of the cherry from around the coffee seed when being washed, leaving behind some mucilage on the seed during the drying process. It requires extra attention to detail to prevent insect damage, moulding or over fermentation, but creates a phenomenal tasting and complex cup.
This has resulted in a cup that is both clean highlighting the floral and red fruit notes, but also allowing for the richer sweeter caramel and chocolate notes.
