Don Gabriel has dedicated 18 years of his life to coffee farming, and is part of the second generation of coffee farmers in his family. Las Letras is located 1940 masl, allowing for a longer ripening and maturing process, perfect for highlighting the unique characteristics of this varietal.

Harvested and selected by hand, this coffee warrants extra attention to detail. It is then mechanically depulped before an extended in tank fermentation for 36 hours, allowing for the development of more complex sweet flavours. It is then dried for 15 days using a solar parabolic drying system.
Las Letras is fully washed and fermented for 30+ hours, therefore expect to find notes of red fruits, vanilla and a sweet honey finish.
