The unique conditions of this lot contribute to a subtly different cup profile compared to the other Tambo lots we sourced this year.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAs with all of Cristian’s coffees, quality control begins at harvest. Cherries are first separated in water tanks to remove underdeveloped fruit, before undergoing a 24-hour dry fermentation followed by 12 hours in tank.
