VILLA INES
Finca San Isidro, is an outstanding example of innovation and dedication in coffee growing. Under the direction of its owner, Pedro Rodríguez, this 4-hectare farm has earned a reputation for producing high quality Arabica coffee, especially in the Borbón Rosado, Borbón Naranja, Cenicafé, Café Supremo and Tabi varieties.
The coffee production process at Finca San Isidro is meticulous and oriented towards obtaining the best possible product. After harvesting, the ripe coffee cherries are floated to remove impurities and then pulped. The cherries are left to ferment for 24 hours, a process that helps develop the characteristic flavours of the coffee. The coffee is then carefully washed and dried in the sun or in specialised machines.
The coffee then goes into the sorting machine, which uses air to separate the light, defective beans from the heavy, quality beans. This process significantly improves the yield factor of the coffee. In some cases, a manual selection is carried out to ensure maximum quality.

The 2-hectare farm is managed with a focus on maintaining soil health and promoting biodiversity, which are essential for the long-term sustainability of coffee production. The use of natural resources, such as cement hoppers for fermentation, demonstrates their dedication to utilising local materials in a way that supports both the quality of the coffee and the environment.
Finca La Piedra stands as a testament to the hard work and dedication of José and Leonor Gómez. Their meticulous approach to coffee cultivation, from the careful harvesting of ripe cherries to the traditional processing methods, results in a coffee that is not only of exceptional quality but also rich in the flavours unique to the Castillo variety.

WHEN ARE WE SENDING OUT YOUR SUBSCRIPTION COFFEES?
We send out your subscription on the last Wednesday of the month, arriving in time for the start of the new month. For those receiving a 2nd shipment (4 Coffees), this will be sent on the middle Wednesday of the new month.WHICH COFFEES WILL I BE RECEIVING?
Our roast team selects the subscriber coffees every month. They are our latest releases from our exclusive farms. When you are starting your subscription you can choose between filter roasts (Fidela Explore) and espresso roasts (Fidela Classic Wholebean).CAN YOU GRIND MY COFFEE?
Our Fidela Explore subscription gives you the option to select your preferred brewing method when ordering and we'll take care of the rest. If you can, we would always recommend buying whole beans and grinding them at home as the shelf life of pre-ground coffee is a lot shorter. *Our Fidela Classic Wholebean Subscription cannot be pre-groundARE THE COFFEES DIFFERENT EVERY TIME?

Fidela Classic Whole Bean Subscription customers can expect the fixed espresso coffee called Sandona.
I HAVE JUST SIGNED UP FOR A SUBSCRIPTION. WHEN WILL IT START?
Your payment is taken as soon as the order is placed, however your order won’t be fulfilled until the coming months release. Placing an order before the last Wednesday of the month ensures your coffee will arrive at the start of the coming month. Orders after this, will roll on to the following month.HOW CAN I ADJUST MY COFFEE SUBSCRIPTION?
