La Union
Origin
From the slopes of La Unión, Nariño, between 1,600 and 1,650 metres above sea level, this regional blend is crafted by smallholder farmers across the highlands of southern Colombia. Grown in the Andes, where warm days and cool nights slow down the maturation of the coffee cherries, this coffee is shaped by altitude, climate, and generations of local knowledge.
Growers
La Unión is part of the Pequeñas Fincas project by Portillas Café, which brings together dedicated producers from across the region. Each grower tends their own plot of land, managing everything from hand-picking the cherries to on-farm wet processing. These are family-run farms, where coffee is not just a crop, but a way of life—nurtured with care, tradition, and community resilience.
Processing
Ripe cherries are selectively handpicked and depulped at the farm. The beans undergo traditional washed processing: 18–24 hours of fermentation in tanks, followed by washing in channels to remove the mucilage and float out imperfect beans. Drying is done on patios, raised beds, or mechanical dryers over 12–15 days, depending on weather conditions.
Sustainability & Aspirations
Through the Pequeñas Fincas initiative, farmers receive support to improve post-harvest practices and adopt sustainable techniques such as organic fertilisation, better water management, and crop diversification. This regional lot reflects a shared vision among producers: to improve quality, protect the land, and create better opportunities for future generations.
Cup Profile
A vibrant cup with bright acidity, medium body, and a balanced sweetness. Expect layered complexity—floral notes, citrus brightness, and subtle caramel—delivering a clear expression of Nariño’s high-altitude terroir.
LA JACOBA
Origin
From the high slopes of La Unión, Nariño, between 1,800 and 2,000 metres above sea level, La Jacoba is cultivated in small farms nestled among the Andes. Here, the combination of altitude, semi-shade conditions, and fertile volcanic soils slows cherry maturation, creating a cup that reflects the unique terroir of southern Colombia.
Growers
This lot comes from family farms across La Unión that are part of the Cooperativa Multiactiva de Cafeteros de Nariño (Coomerciacafé). Generations of producers care for their land with dedication—planting, harvesting, and processing the coffee by hand. Coffee farming here is more than an occupation: it is a way of life, rooted in resilience, tradition, and community.
Processing
La Jacoba is made up of Castillo, Colombia, and Caturra varieties. Ripe cherries are handpicked and depulped at the farm, followed by lavado tradicional (traditional washed process). Fermentation lasts 18–24 hours, after which the beans are washed to remove mucilage and sorted. Drying takes place on patios or in silos over 12–15 days, depending on the weather, until humidity stabilises around 10.5%.

Producers in La Unión are committed to constant improvement. Through collective efforts, they maintain traditional methods while adopting better post-harvest practices and sustainable farming techniques. Their goal is to preserve the land, strengthen community ties, and build brighter opportunities for the next generation of coffee growers.
Cup Profile
A clean, balanced cup scoring 84.75 SCAA. Expect fragrance and aroma of panela, chocolate, and caramel. Flavour notes of caramel and panela carry through, with a medium body, medium acidity, and a juicy balance. The aftertaste lingers sweetly with panela, delivering a characteristic expression of Nariño coffee.
