This Bourbon Sidra micro-lot comes from Finca La Italia, a 3-hectare farm in the La Betulia district of La Unión, Nariño. Here, Gabriel Rey Regalado cultivates around 600 Bourbon Sidra trees alongside other traditional varieties. At 1550 metres, the altitude shapes the profile of this coffee, giving it pronounced acidity, a medium body, and delicate floral notes, balanced by panela-like sweetness.
The process begins with careful cherry selection, looking for uniform ripeness and deep red colour. The cherries are depulped immediately to avoid premature fermentation, then undergo controlled fermentation in clean tanks before being washed and dried on patios under the Nariño sun. This meticulous traditional washed method preserves clarity and highlights the natural elegance of the Sidra variety.
Finca La Italia is a true family project. Gabriel, his wife, and their children—two of whom are actively involved in production—oversee each step of processing, with a particular focus on careful drying to ensure consistency and quality. During harvest, up to 20 seasonal pickers join to hand-select only the ripest cherries.
Expect a cup with vibrant floral aromatics, lively acidity, and juicy fruit tones, complemented by a soft panela-like sweetness. A beautifully expressive Bourbon Sidra from the lower slopes of La Unión, crafted with dedication and tradition.
