PROCESS: Extended Fermentation with Water

At Finca El Higuerón, Albeiro Muñoz and his family carefully produce high-quality coffees using an extended fermentation process. After pulping, the coffee undergoes 72 hours of controlled fermentation in water, then is washed and slow-dried under parabolic covers for up to 20 days.

This slow, attentive approach brings out a rich and layered cup profile.

Expect flavours of orange, mango, and a syrupy jammy sweetness, with a rounded body and long finish. A beautifully clean and well-balanced coffee from the highlands of Nariño
