Sandro Chávez was born into the coffee farming world, and is now the fifth generation of coffee farmers in his family. The dedication and years of experience are apparent in the quality of his coffee. A long-standing relationship, we have been working with Sandro for over 5 years.
During this time through joint projects, he has been able to build his own dedicated drying tables which has improved the quality of his coffee immensely. All washed coffee goes through a fermentation stage after the coffee cherry skin has been removed to help break down the mucilage inside.
Sandro has taken fermentation and extended it. Naturally occurring microbes, yeasts and bacteria all help in the breaking down of the sugars and starches turning them into alcoholic acids. Being fermented in water helps in allowing the farmer to extend this fermentation time leading to a lighter body, more complex acidity, and more refined flavours.
