Finca Bella vista, managed by Moises Enríquez, is located in the San Andrés Vereda of El Ingenio Corregimiento, within the Sandoná Municipality. Moises, known locally as "the man with the blue house," is an experienced coffee grower who explained the coffee processing using the federation's machinery with great expertise.
The farm cultivates the Pink Bourbon variety, which undergoes a meticulous processing method designed to enhance the coffee's natural sweetness. The process begins with a washed and double fermentation method, where the coffee cherries are first fermented for 24 hours. This is followed by an additional 40 hours of fermentation with mucilage, which intensifies the coffee's flavour profile.
After the fermentation process, the cherries rest in sacks for 12 hours before being depulped. This stage, known as fermentation in cherry, allows the coffee to develop a richer sweetness. The depulping takes place in a cement hopper, a method that contributes to the coffee's distinctive flavour.
Drying is carried out in a retractable roof dryer, known locally as "Elda." This innovative drying method allows the roof to be closed during rainy periods and opened when the sun is shining, ensuring that the coffee dries consistently and reaches the desired moisture level.
The careful and traditional approach to coffee processing at Finca Bellavista, combined with Moises' deep knowledge and the use of modern techniques, results in a coffee that is rich in flavour and of high quality.
