Christian is one of the most enthusiastic coffee producers that we work with. He is in his mid 30’s and graduated as a Agronomist. When you visit his farm it is clear to see how he has implemented all of his studying and experience working with Carcafe on his farm. Their farm is in the town area of El Tambo and is situated at 1850m making it one of the highest altitude farms we work with.
Christian grows a range of varieties on the farm, including Gesha, Pink Bourbon and Laurina, and focuses on careful farm management to maintain both quality and sustainability and the farm is impeccably managed.
One of the lots Amargura which we are launching now is located at the far end of the farm and is accessed by a ‘Talabito’ (cable car) which is one of the great attractions of the farm.
The Amargura coffee is one of the series of special varietals we will be launching this year. It is a Pink Bourbon coffee which has undergone a washed processed , Christian point of difference is he separates the coffee cherries at the very start of the collection process using tanks. He leaves the coffee for 12 hours in tanks which causes the unripped cherries to rise to the top as they are underdeveloped and are then removed leaving the more mature cherries to be further processed.
He has a sophisticated drying machine run on cisco which enables a quicker and more uniform drying process. This uniformity has a big impact on the quality of the coffee. When Frank roasts this coffee the rigorous process at origin is extremely clear as there are little or no defects to be removed. Amargura is 1 of 3 the lots of christian that we have bought this year.
We have roasted this lot for filter as its a Special Varietal, being pink bourbon it is a delicate floral coffee with a medium acidity perfect for a filter coffee.
