This is one of several lots we have this year from El Derrumbo, the farm of Esperanza and Mauro Reyes in La Unión, Nariño. Alongside their Yellow Honey, Sidra Bourbon, and Gesha lots, this Natural process offers a different expression of their approach to fermentation and flavour development.

Following the same attention to detail seen across all their coffees, this lot begins with the careful selection of fully ripe cherries. Instead of being depulped early in the process, the cherries are fermented and dried whole, allowing the sugars and fruit compounds to remain in contact with the seed for a longer period.

The result is a cup where the coffee tastes more like fruit than anything else, compared to their honey processed lot. The extended contact between the coffee and the fruit intensifies body and sweetness, while still maintaining the clarity and balance that define coffees from El Derrumbo.

Having worked closely with Esperanza and Mauro, it’s exciting to see how their ongoing experimentation with processing methods continues to shape distinct profiles across each lot we source from their farm.
