Rubio and Narivel Realpe are excited to share their long-fermented washed coffee with us, and we’re proud to be launching it this year. This marks the fourth year of our partnership.
Last year we spoke with Rubio about the story behind the farm. He explained to us that part of the land was inherited from his father, while the rest he has gradually purchased and expanded over the years.
Rubio has worked on perfecting his coffee processing techniques and is especially grateful for the guidance and experience shared by his neighbours at Finca El Derrumbo, owned by the Reyes family, just down the road. This exchange of knowledge has played an important role in refining and improving the fermentation process used for his coffees.
We’ve selected this lot specifically for our espresso roast. The longer fermentation process helps bring out deeper sweetness in the cup, with notes of caramel, chocolate, and mature sweet fruit. These flavours work beautifully in espresso and pair particularly well with milk-based drinks.
