This is the second Pink Bourbon we are releasing from Finca Tambo this year, offering a different expression of the same variety from a distinct lot on Cristian Burgos’ farm in Tambo.
While sharing the same meticulous farm management and processing approach, this lot comes from a section of the farm located at the far end of the property. The unique conditions of this lot contribute to a subtly different cup profile compared to the other Tambo lots we sourced this year.
As with all of Cristian’s coffees, quality control begins at harvest. Cherries are first separated in water tanks to remove underdeveloped fruit, before undergoing a 24-hour dry fermentation followed by 12 hours in tank. Drying is carried out using a controlled mechanical system, ensuring consistency and clarity in the cup.
Having sourced three different lots from the Tambo region this year, this coffee highlights how even within the same farm and variety, small changes in lots and conditions can result in distinct flavour profiles.
Roasted for filter brewing, expect a delicate and floral cup with a refined sweetness and medium acidity, another elegant example of Pink Bourbon from Finca Tambo
